The objective involves the development and validation of experimental designs aimed at evaluating effectiveness of systems biopreservation applied to meat foods. It is clear that the approach methodology used can then be easily adapted to the application of different food matrices and of products made ​​by various technologies.

The optimization of biopreservation procedures will be carried out in order to  improve the quality and stability of food products.
