The objective involves the development and validation of experimental designs aimed at evaluating effectiveness of systems biopreservation applied to meat foods. It is clear that the approach methodology used can then be easily adapted to the application of different food matrices and of products made ​​by various technologies.

Technological innovation made in respect of the environment and “natural” product, could be resolve the critical issues related to poor shelf life of fresh meat, extending its shelf life, reducing production costs and thereby support the competitiveness of regional businesses.
