With a production of 15 million tons in 2008, Europe is the third world power in the fisheries sector, after Asia and Latin America (FAO, 2010). The development of European community production in view of the considerable increase in demand, cannot, however, to satisfy the internal market is still heavily dependent form the import.

Results of the present research can be used for culminate in the creation of a computerised handbook containing QIM schemes, the tables for the prediction of remaining shelf-life and iconographic material outlining the main changes of visual attributes during conservation.
This handbook represents a landmark for its use in the direct control over the auction and at fish processing plants for the evaluation of raw materials and for the training of quality managers of the fishery products factory.
