The project is aimed to the development and experimentation of analytical tools for the monitoring of olive oil extraction process to improve and innovate the sector of extra-virgin olive oil. In fact olive oil production is a unique and peculiar process in terms of difficulties of operational standardization.

The analytical devices that will be developed are an electronic nose, an electronic tongue and electronic eye based on the integration of tristimulus colorimetry and IR spectroscopy (NIR, FT-IR).
